Colcannon

Colcannon is a side dish  that is usually served with a Sunday roast. Colcannon consists of mashed potato, butter, scallions, and kale. I also like to add parmesan and a very small amount of garlic granules. Some people also add a little bit of cream.

Method:

Peel the potatoes. Rinse them under water. Place the potatoes in cold water and bring it to the boil. Turn it down and simmer for 20 minutes. Then drain the potatoes. Add some butter. Then mash the potatoes. Tear the kale into little pieces, getting rid of the stem. Blanch the kale. Chop up the scallions. Add the kale and the scallions to the mash  and stir.

I add some parmesan and black pepper for extra taste!

There is a famous song written about Colcannon, it has two titles: “Colcannon” and “The Skillet Pot”

“Did you ever eat Colcannon, made from lovely pickled cream?
With the greens and scallions mingled like a picture in a dream.
Did you ever make a hole on top to hold the melting flake
Of the creamy, flavoured butter that your mother used to make?”

The chorus:

“Yes you did, so you did, so did he and so did I.
And the more I think about it sure the nearer I’m to cry.
Oh, wasn’t it the happy days when troubles we had not,
And our mothers made Colcannon in the little skillet pot.”

    • Hi Terri, I have a big bag of Kale. I am trying to use it up in different ways! I made this yesterday. Tonight I made a beef stir-fry with a tin of pineapples, soy sauce and some veg. I threw in the kale as it is used in Asian cuisine. It was really good!

      • I piled kale onto my pizza last night. It was yummy. (You might see this comment twice. But the first time I pressed “post” it didn’t show. Maybe because I put a link in to the picture of my pizza with kale on it.)

      • Ah..yes I must try that..it would be like having spinach on it. It is a good idea to make your pizza a little bit healthier! I love pizza!

      • Yup. I put spinach on my pizza all the time. Sometimes I will just use lettuce. I wait until the pizza is bascially done, then just wilt the greens.

        Thanks, again for more kale ideas! Although I used up all the kale in tonight’s dinner. :-)

  9. Kale chips, now this! Wow! I’ve heard of colcannon but had no idea what it was! This sounds just fabulous! The kale would not only add great interest and taste, but also some nutrition! I’m delighted to make its acquaintance! :-) Debra

  18. Today I’ve learnt a new English word, kale. It makes me very happy because I don’t like kale.
    This mean I never have to worry about ordering it by mistake when I’m overseas, :) . I love the rest of the recipe, and I’m going to make it tomorrow. Thank you for following my blog!

  23. I have more kale plants going than I can count in my garden, and am casting around to broaden my kale recipes; this looks wonderful. I’d plum forgotten about colcannon, and I’ve lived in Ireland! I’m growing potatoes this year for the first time and will cross my fingers that maybe both key ingredients for this dish could be homegrown for me later in the season! Thanks for sharing!
