Stuffed courgette (zucchini) with feta, chorizo and sundried tomatoes

I like stuffing vegetables! I think it is creative and easy to adapt.  I thought a courgette (zucchini) stuffed with feta, chorizo and sun-dried tomatoes would make a nice tasty snack!

Place a courgette in boiling water, bring it to the boil and then drain the water. Place the courgette aside and leave it to cool. This helps soften the courgette and makes it easy to cut open.

Cut up the chorizo.

In a bowl, mix together some shredded sun-dried tomatoes with crumbled feta cheese. I crushed the mixture with a fork.

Fill the courgette with the mixture and the chorizo.

Place in the oven for 35-40 minutes at 190C.

I also made this with red peppers and red onions topped with parmesan.

  13. Hi, there.Very nice recipe. I liked how you softened the courgette in the boiling water. I will do it, too. May I suggest a trick,too? When using dried tomatoes,place them in a liquid (water, wine,ouzo etc) for 5 minutes before using them.This way they will regain all their hidden moisture offering your dish extra flavor. Greetings.
